Production of Damoiseau's Agricultural Rum

Rhum Blanc or Grappe Blanche (white rum) is produced by fermenting pure cane juice or vesou which is then distilled to about 70° in a column still. After distillation it is stored at a high alcohol concentration in wooden barrels with a capacity of between 10,000 and 60,000 litres for 3 to 6 months.

While the rum matures, the volatile compounds gradually evaporate with the assistance of mixing and aeration.

Before bottling, the final stage of production, Damoiseau Rhum Blanc Agricole is gently diluted to its saleable strength (40°, 50° or 55°) by adding water.

This process guarantees the quality and authenticity sought by Rum enthusiasts.
